Q. What is Agave nectar, and why do you use it?
    A. Agave nectar is a natural sweetener with a low glycemic index. It is made from the wild agave cactus plant. Agave nectar is an excellent substitute for refined sugar and honey.

Q. What is the difference in filtered water versus regular water, and why do you use it?
    A. Filtered water removes more dangerous contaminants than other purification methods. Filtered water greatly reduces the risk of rectal cancer, colon cancer, and bladder cancer by removing chlorine and chlorine byproducts. Filtered water is not subject to phthalate contamination; giarida or cryptosporidium. Something that your local municipal water treatment plants do not or can't manage to do. Hey it just tastes better and so will the food you eat. At this point in time, there is simply no better choice for purity and economy than filtered water.

Q. What is the best way to store my bread?
    A. If you will not be eating the whole loaf right away, it is best to cut you loaf in half, wrap and store in an air tight container in the freezer, till needed. Avoid storing bread in your refrigerator as this will cause the bread to dry out and go stale.

Q. I am sensitive/allergic to yeast and wheat. Can sourdough help?
    A. No. Sourdough has plenty of yeast and wheat in it, it's just that the yeast isn't purchased separately. If you have those kinds of food sensitivities, as always consult a physician or dietician for advice on what you can eat safely.

Q. I am allergic to wheat and/or gluten. Do you make any bread I can eat?
    A. Unfortunately, no. All of our breads contain wheat flour (white flour is still wheat flour). Gluten is a protein in wheat flour to which some people are allergic. While most people who are allergic to wheat or gluten have mild reactions it can be very severe for some, even fatal.

How do you make your breads?
    A. All of our breads are made with four basic ingredients: flour, water, salt, and yeast. To these four ingredients we may add other ingredients such as walnuts, olives, herbs, and cheese. Our breads contain no preservatives. However, some do contain eggs, butter and/ or oil for flavoring purposes, which also extend shelf life.
